Sun dried tomatoes have the same nutritional value as fresh, that are rich in lycopene, antioxidants and vitamin K.
The sundried tomatoe is a food consisting of mature normal tomatoes which are dried under the sun to evaporate the water containing them.
To produce one kilogram of dried tomato need about 14 kg of fresh tomatoes.
Traditionally served with olive oil, rosemary, basil and garlic.

Secret To Soften The Dried Tomatoes
In a saucepan pour water halfway and cook until boil. Then add the sun-dried tomatoes (which is tough and dried) and simmer for about 20 minutes.This will soften and will be ready for use.
Then let some time to drain and then save them in a sterile jar covered with olive oil.
Add if you want in the jar herbs or spices.
We suggest fresh oregano or thyme grained black pepper and garlic.
Also in this way you will have scented oil for salads and your foods.
The dried sun tomatoes except for the use in cooking, is wonderful accompanying for spirits such as wine, ouzo, tsipouro, whisky etc etc.
