Although you obviously won’t add milk or syrups to it, however the ratio of sugar to coffee, the amount of coffee, the length of time it is boiled, whether it has bubbles or not, all these are factors that can affect the taste and texture of the coffee.

Decaffeination Process

The process is done using steam & water through a natural process.

The beans are immersed in water, their pores open and the caffeine, which is by nature a water-soluble substance, is slowly removed.

The resulting solution passes through special filters to remove the caffeine, even before roasting, so that the aroma and taste of the coffee are preserved unchanged.

A Small Tip

For better results you will need a Greek copper coffee pot called ‘Briki’

Place the briki on the gas and turn on so that it is on low heat.

Very slowly let the coffee heat up, (keep the flame very-very low).

Do not leave the coffee unattended.

You will slowly see the surface start to tremble (I describe it like a volcano waiting to explode).

Once it starts foaming, lift it slightly from the heat until the foam/bubbles settle and then put it on the fire again and let it start foaming and puffing up.

Then remove.

This step is important to get a good coffee.

You don’t want to let it over-boil otherwise it will not have that creamy/foam on top, but you don’t want it under-boiled because then you may taste the grounds in the coffee.

Add  1-3 tbsp Yerba Mate depending on the strength that you are looking for, to the 2/3 of a container (use a mate gourd, cup, small mason jar etc).

Tap the Yerba Mate to one side of the container to create a 45° little slope on one side.

Moisten the Yerba Mate with cool water. Just a splash at the bottom of the slope.

Gently insert the filter tip of bombilla (straw) into the bottom of the container.

Add warm water in the bottom until it reaches the 3/4 of your Yerba Mate slope.

Sip this first pour and re-infuse up to 10 times with hot water.

If you're infusing with hot water, steep for 4 to 10 minutes. If you're cold brewing, we recommend to letting it steep for 1 to 10 hours.

Again, it all depends on the strength that you're looking for.

Yerba Mate can be infused with hot (65-80°C / 149-176°F) or cold water.

One important thing to remember is to never use boiling water.

Boiling water burns all the nutrients and makes bitter Yerba Mate.

Also, making a brew in the traditional gourd and drinking with a straw will increase its strength.

Heat the water, but do not allow it to boil. If the water is too hot, it will cause the resulting tea to be bitter. Likewise, if the water is lukewarm, it produces a hearty and more wholesome flavor.

Pour the water over the tea leaves in the cup and allow them to steep for 1-2 minutes.

Allow the tea to cool for 1-2 minutes before serving.

Pour small quantities of tea into each cup as that will help you get the best blend of strength and flavor.
